Gluten Free Lasagna for Summer

This feeds 4 adults. Make in a medium size casserole. I can’t take credit for this recipe, my sister came up with it!

We loved it so much with my family we all had second servings! I hope you enjoy it as much as we have.

Ingredients:

Brown rice lasagna

Fresh Mozzarella

3 medium size carrots

½ a zucchini

Ground beef

Diced Onions

1 large garlic clove

Tomato paste

Salt

Italian Seasoning

pepper

olive oil

Directions:

First step, boil water with salt and cook your lasagna following the instructions on the box they come in. Make sure not to over cook. So, read the time for it to be cooking on the box.

Second step, While we do these next steps we need to first pre-heat our oven at 350 degrees Fahrenheit. So we continue… In a large pan, add 2 tbs of Olive oil and add about 3 tbs of diced onions and add the minced garlic clove, then let those become translucent. Add the ground beef preferably (2% fat. Not with too much fat) to the pan and making sure that the ground beef is cooked well and you make the balls of meat way smaller. By this I mean to ground it, because as you know it gets clumps, so you need to break those apart.

Third step, once the meat is cooked, you will add the tomato paste to it, stirring until it is all incorporated. You can add a little (1tsp) of the pasta water to make it easier to dissolve the paste.

Fourth step, Once that is done we go to the baking casserole and add one layer of the lasagna in a horizontal manner. Then over that layer we will add a layer of carrots and zuchinni mix, cut your zuchinni in rounds and your carrots too. Make sure to peel your carrots and wash both the carrots and the zuchinni before adding them to the lasagna.

Fifth step, then we add part of the cooked ground beef over the top of the vegetables. Next we add a layer of fresh mozzarella shredded or in rounds, depending on how you purchase it. Then we repeat the process by adding another layer of lasagna, then the vegetables and ground beef until we arrive at the top, and we top it off with some more mozzarella.

Now it is time to open our oven and put the casserole inside carefully. Make sure to put on some gloves or any kitchen towel folded, so you do not get burned.

We need to wait for the lasagna to be ready in 45 minutes.

While we wait we can pick the trash and the mess we made in the kitchen so to distract ourselves as we wait and to have it ready by the time it is done. Also do not go and do something else while the Lasagna is in the oven, you do not want it to get burned. Lol. So stay close by monitoring it and seeing when the cheese on the top is golden brown, which will indicate that it is ready.

And that is all, you can serve it with a green salad on the side and voila! Dinner is served. You will be surprised at how easy and delicious this recipe is. Enjoy!
